Leftover Cake Truffles

Do you have any cake remnants? Have you finished making a heart shaped cake or a special design? Don’t throw away those precious cake leftovers! You can make a lot of delicious desserts with cake remnants and today we’re going to show you how to make these lovely cake truffles. They’re extremely easy and fun to make, perfect for an afternoon with your children.

Pastry is so precise and sometimes accidents happen. Forgot to add baking powder to your cake? or maybe you forgot to grease your pan and your cake got stuck? Don’t panic! Yes, maybe you won’t be able to make that amazing cake you wanted but these truffles are a great option to not waste any ingredients and effort, plus they taste amazing!

This recipe was created when we were testing our recipe for Blueberry Banana Gluten-Free Muffins, we baked some leftover batter in a round mold and forgot to grease our pan and it got completely stuck. (Yes, it happens to everybody). We refused to throw it away and decided to make these truffles instead. We were so happy with the final result that now we’re sharing this recipe!

Ingredients

Servings: 15 truffles aprox. (30 g ~ 1 oz per truffle)

Difficulty: Easy!

Truffle

  • 300 g Cake Leftovers (10.6 oz)
  • 75 g Cream Cheese (2.6 oz)
  • Optional:
  • 10 g Sugar (0.4 oz) (2 tsp)

Coating

  • 150 g Chocolate coating (5.3 oz)
  • Lemon or lime zest
  • Sprinkles
  • Milk chocolate

For this recipe, we used these kitchen tools

Method

1.In a bowl, crumble the cake.

2.Melt the cream cheese and sugar over a double boiler. Mix until the sugar is dissolved. If your cake is already very sweet, don’t add sugar. Let it cool

3.Add the cream cheese to the cake little by little until you can easily form a ball with the dough. Make the balls (30 g ~ 1 oz) and put them over a parchment paper or Silpat. Freeze for 30 minutes.

4.In a bowl, melt the chocolate coating over a double boiler or microwave.

5.Roll the truffles in the chocolate until fully coated. Remove them with a fork and place them over parchment paper or Silpat. Let them cool.

6. When the chocolate is almost, hard add the decorations on top. Lemon zest, sprinkles and chocolate lines are perfect, they add flavor and your truffles will look amazing!
