Ingredients (10 servings aprox. 20 cm ~ 8 inches ring mold)

Cookie base

  • 4 Oreo packages (16 cookies)
  • 2 tbsp Melted unsalted butter

  • 350 g Cream cheese (12. 3 oz)
  • 300 g Sugar (10.6 oz)
  • 50 g Powdered gelatin (1.8 oz)
  • 1 1/2 cup Water (for the gelatin) (375 ml)
  • 3 cups Heavy cream (750 ml)

  • 4 Oreo packages (16 cookies)
  • 50 g Chocolate (1.8 oz) (for the lines)
  • Optional: Chocolate Truffles
  • Chocolate Ganache (You can learn how to make chocolate ganache in our “Double Chocolate Brownie” recipe, link here : Brownie recipe )

For this recipe, we used these kitchen tools

1.Line your ring mold with aluminum foil (you can use a mold with a base just be more careful unmolding)

2. Crush the oreo cookies (using a food processor or blender) and mix it with the melted unsalted butter. Put in in the mold and press it. Chill until needed.

2. Melt and mix the cream cheese and sugar over a double boiler until well combined

3. Whip the heavy cream until soft peaks and mix it with the cream cheese

4. Mix the powdered gelatin and water. Let it rest for 1 minute and melt it in the microwave (1 -2 minutes). Mix with the rest of the ingredients.

5. Pour the mixture into the mold. Let it freeze for at least 3 hours or overnight.

6. Unmold it carefully with the help of a kitchen towel soaked in warm water or a cooking torch.

7. Decorate your cheesecake! Get creative, we used Oreo cookies in half and quarters, melted chocolate lines and some chocolate truffles. You can even make chocolate ganache and pour it over for a more chocolatey dessert.
